Irish Soda Bread Muffin RecipesThese muffins were a great success with both my mom, who prefers not too fresh muffins and his friend, Mary. I will certainly in my file to “do more”. The next time I will be sure to use the white flour, raisins of Corinth and a bit of orange zest.

Ingredients:

  • 1 1/2 cup all-purpose flour
  • 3/4 cup whole wheat pastry flour
  • 2 tsp yeast
  • 1/4 teaspoon of sodium bicarbonate
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 1/2 cup currants, grape grapes or other dried fruit, chopped
  • 1/2 to 2 teaspoons cumin seedsĀ  to taste (optional)
  • 1 large egg
  • 1 cup butter serum, yogurt and cream sour
  • 6 tablespoons of melted butter or 1/3 cup vegetable oil

Method:

  1. Preheat oven to 400 degrees f. grease slightly a 12-Cup muffin pan cups standard or cuts with line cake small paper bags and then anoint paper bags.
  2. In a mixed medium bowl, combine flour, yeast, bicarbonate of sodium, salt, sugar, currants or raisins and seeds of caraway (if used) up to this that well mixed.
  3. In another bowl, beat together the egg, buttermilk and melted butter. Quickly and gently mix the dry ingredients and wet set up to which combines the mixture. (Mix will be more muffins cause will be hard.)
  4. Spoon dough in the prepared muffin bread, full filled with about 3/4 cup. The stiff dough into cups look like hills.
  5. Muffins bake 5 to what a toothpick inserted in the middle of a muffin appears, about 20 minutes. Remove from the oven. Suggestion the muffins in the Pan, so that sound does not melt you wet. Wait 5 minutes and transfer the Muffins to a cooling rack. Serve plain or these muffins with butter and your favorite jam.
