Ratatouille with Potato and Egg Recipes
The Ratatouille is a traditional dish from our cuisine that consists of a various seasonal vegetables fry and that we can serve as accompaniment or main dish. The basis of the traditional Ratatouille ingredients is the green pepper, red pepper, tomato and Zucchini. A. from there, we can play with other vegetables or complete the dish with potatoes in cubes and eggs in the recipe.
Ingredients:
- Olive oil
- 1 medium Zucchini.
- 1 green pepper
- 1 red pepper
- 1/2 Kg. ripe tomatoes
- 1 onion
- Salt
- Sugar
- 2 large potatoes
- 3 egg
Method:
- Clean the peppers, removing the seeds, open them and chop them in squares, like the onion. Heat a bit of olive oil in a frying pan and poached vegetables chopped to simmer, stirring occasionally as with a wooden spoon.
- On the other hand, Peel and cut the zucchini into cubes and put them to fire in another frying pan with a few drops of oil. When they are cuddly, remove from heat.
- When the vegetables this almost ready (the Golden onion and peppers soft) add ripe tomatoes, peeled and cut into small squares. Add a pinch of sugar to remove acidity and cook a few minutes.
- Mix the vegetables and the zucchini and cook one minute so that the flavors are mixed.
- To accompany the Ratatouille, fry a few squares of potato in the deep Fryer that add to the mix and crashed a few eggs.
