Sambal Lado

This food is the cuisine of the region, especially Indonesia West Sumatra. This food is made from a variety of seasonings and create a very pungent flavor. This food is perfect eaten with hot rice and fresh vegetables.

Ingredients:

  • cooking oil
  • 25 grams salted anchovy
  • 15 sheets of orange leaves
  • 2 pieces of bay leaves
  • lime juice 1 tablespoon

Seasoning (chopped coarse):

  • 150 grams onion
  • large green chilli 150 grams
  • curly green chilli 100 grams
  • small round green eggplant 75 grams
  • 50 grams green tomatoes
  • 7 cloves garlic
  • 1 cm ginger

Method:

  1. Stir-fry all the ingredients, herbs and anchovies until fragrant and cooked. Remove and drain.
  2. Stir-fry seasoning mashed with 2 teaspoons coarse salt and 1 teaspoon sugar. Set aside.
  3. Preheat 10 tablespoons of cooking oil over low heat. stir-fry seasoning coarse, lime leaves and bay leaves, stirring frequently, until fragrant and cooked.
  4. Pour the lemon juice, stir well and remove from heat. serve
