Sambal Lado
This food is the cuisine of the region, especially Indonesia West Sumatra. This food is made from a variety of seasonings and create a very pungent flavor. This food is perfect eaten with hot rice and fresh vegetables.
Ingredients:
- cooking oil
- 25 grams salted anchovy
- 15 sheets of orange leaves
- 2 pieces of bay leaves
- lime juice 1 tablespoon
Seasoning (chopped coarse):
- 150 grams onion
- large green chilli 150 grams
- curly green chilli 100 grams
- small round green eggplant 75 grams
- 50 grams green tomatoes
- 7 cloves garlic
- 1 cm ginger
Method:
- Stir-fry all the ingredients, herbs and anchovies until fragrant and cooked. Remove and drain.
- Stir-fry seasoning mashed with 2 teaspoons coarse salt and 1 teaspoon sugar. Set aside.
- Preheat 10 tablespoons of cooking oil over low heat. stir-fry seasoning coarse, lime leaves and bay leaves, stirring frequently, until fragrant and cooked.
- Pour the lemon juice, stir well and remove from heat. serve
To 8 servings
